Catching Up!

Happy new week Friends!  The sun is shining today and the temps are reaching the high 60’s!!  I ran this morning and I reached my goal- 5 1/2 miles!!  I was so happy to finally get over the 5-mile mark and still feel good.  My plan is to run a 1/2 marathon next summer and I should definitely make my goal. 😊

This weekend found us staying home and relaxing.  We rode bikes (14) miles Friday night and on Saturday we stayed in most of the day because of rain.  I read and Dave worked on the computer.  And of course, we caught-up on Shameless.  We are on season three and we are addicted– binge watching whenever we get a chance!

Sunday, we watched the Lions beat the New York Giants!  It was an amazing game and I kept hitting Dave and screaming when the Lions did something good on the field.  I think he might ask me to sit on a separate sofa if I continue beating him up during the Lions games. 😗

We did get to Bed, Bath and Beyond for a spiralizer over the weekend.  Do you have one of these?  It makes noodles out of vegetables.  Last week I bought some zucchini noodles at Kroger and they were delicious, but expensive.  I am on the Keto Diet right now, a mild form of it, and pasta is out of the question.  Someone suggested using zucchini noodles instead if I wanted an easy meal without the carbs.  Dave and I fried up the zucchini noodles in olive oil and tossed them with red and yellow peppers, onions and tomatoes and a scoop of prepared pesto sauce.  It was delicious!  And now that I can prepare my own vegetable noodles, I will prepare this dinner more often- it’s a healthy delicious alternative to pasta.

Here’s a YouTube video to help you decide if you also want to purchase a spiralizer.  We liked this one because it’s just the two of us and I didn’t want to invest too much money ($10) and I didn’t want to give up too much drawer space to store a larger spiralizer.
